Happy Thanksgiving friends! Today the family is having an early feast and then headed to the beach for the sunset. We are having so much fun here in Florida!
My sister-in-law and I are enjoying some tasty margaritas as we food prep. This recipe is also good for the day after Thanksgiving since it makes good use of the cranberry sauce!
I like to make my cranberry sauce the day before, here’s the simple recipe I use:
Add two 12 oz. bags of rinsed fresh cranberries to a medium size pot. Add 1 cup of orange juice, 1 cup of water and 1 ½ cups sugar to the cranberries. Bring to a boil over medium high heat, cook and stir for 3 minutes until the cranberries begin to pop. Reduce heat to low and stir continually for 10 minutes. Add more sugar to taste if you like your cranberry sauce to be sweeter. Cool cranberry sauce in refrigerator for an hour.
To make the margaritas, you’ll need tequila, ice, triple sec, and fresh limes. In a blender combine 1 ½ oz. tequila, 1 tsp triple sec, 1 ½ cups ice, 1 tbsp. cranberry sauce, and fresh squeeze of 1 lime for each margarita. Blend and serve!
Happy Thanksgiving everyone! I’m taking a few days off to spend time with family and will post the Weekend Roundup on Sunday.
